South Australian Blue Gum
Eucalyptus leucoxylon ssp. leucoxylon
Blue Gum honey is one of South Australia’s most recognisable eucalyptus varietals, known for its depth, warmth, and smooth finish. Harvested during Blue Gum flowering seasons, this honey develops a rich amber colour with layered caramel notes and a lingering eucalyptus character that gives it both sweetness and structure.
Its full-bodied profile makes it a versatile everyday honey, equally at home folded through warm oats, paired with sharp cheeses, or drizzled over thick sourdough with cultured butter. Blue Gum produces a honey with presence — rich without becoming overpowering.

Cup Gum honey offers a lighter and more delicate expression of eucalyptus nectar. Produced during shorter flowering windows, it carries floral aromatics with a softer finish and subtle citrus brightness.
Compared with darker eucalyptus varietals, Cup Gum feels cleaner and more restrained on the palate, making it especially suited to yoghurt, herbal tea, fresh fruit, and lighter cheeses. Coastal Mallee
Eucalyptus diversifolia
Coastal Mallee honey reflects the harsher beauty of South Australia’s coastal eucalyptus environments. Produced from native mallee species growing in exposed coastal regions, this varietal develops earthy complexity with strong native floral notes and a darker, more layered finish.
Its savoury bush character pairs beautifully with charcuterie, roasted vegetables, aged cheeses, and slow cooking. No two harvests are identical, with rainfall, flowering density, and surrounding native flora all contributing to the final flavour profile.
